We celebrated my father in law's 84th Birthday on Sunday afternoon and I needed a ripper of a cake to mark the celebration!
This Pear, Almond & Chocolate Cake recipe is absolutely scrumptious! The sweet pear chunks are combined with a buttery cake batter and a handful of bittersweet chocolate for the perfect combination.
Pear, Almond & Chocolate Cake
5 brown pears
100g brown sugar
300g soft butter
250g caster sugar
150g wholemeal flour
150g almond meal
2 teaspoons vanilla essence
100g chocolate buds
Peel, core and cut the pears into 6 pieces.
Melt 80g of butter with the brown sugar over high heat. Add the cut pears and cook for 8-10 minutes until pears are tender and sauce has caramalised.
Blend the additional butter and caster sugar until white and fluffy
Add the eggs and mix in one at a time
Add in the wholemeal flour, the almond meal and the vanilla and mix to combine
Put the batter into a 24cm springform tin
Cover with a layer of chocolate buds then layer the cooked pears on top, pushing into any batter you can see!
Drizzle the shaved almonds over the top, again pushing into any batter that is visible.
Cook for 50 minutes on 170C or until puffed and golden.
Serve with cream or vanilla ice-cream!
